Maido, the renowned Nikkei restaurant led by chef-owner Mitsuharu ‘Micha’ Tsumura, has risen from No.5 in 2024 to claim the top position. Maido is celebrated for its fusion of precise Japanese techniques and vibrant Peruvian ingredients, presenting a multi-course tasting menu grounded in cultural storytelling and seasonality. The dining experience, from the welcoming ‘Maido!’ to the final taste, showcases over 15 years of innovation and commitment. Following Maido in the rankings are Asador Etxebarri (No.2) in Atxondo, Spain, and Quintonil (No.3) in Mexico City.
